Schnitz (Apple) Pie

The recipe for this delicious pie has been passed down from my grandmother to my mother to me. I hope my daughter continues the tradition. For those of you who are shaking their heads, this is a recipe favoured by the Pennsylvania Dutch, and by those of us living in Waterloo County, Ontario, Canada. I’m sure there are a number of version of this pie, but I like this one best. Although the pie is rich, it’s worth a little self-indulgence…you’ll be sure to ask for seconds!

4 medium-sized apples, cored, peeled and sliced (I like to use McIntosh apples, but any tart apple will do)
1 9″ unbaked pie shell (or your own pastry)
1 c. brown sugar
3 T. flour
1 t. cinnamon
1/4 c. butter at room temperature
3 T. medium cream

Arrange apples slices in an attractive pattern in the pastry shell.
Combine brown sugar, flour, cinnamon, and butter in a bowl. Thoroughly blend ingredients together with a fork.
Spread brown sugar mixture over the apple slices. Drizzle cream over the brown sugar mixture.
Bake in 375 F. oven for about 50 minutes.
