I don’t know about you, but here in Ontario, we’re still having some pretty cold days. So I decided to make my favourite Beef Stew the other night for supper. Here’s my recipe.
Recipe feeds two-three people
1 lb. stew beef
Garlic clove, chopped
1 small onion, chopped
1/3 c. ketchup
2-3 potatoes, cubed (I leave the skins on)
2 medium carrots, peeled and sliced
Any other chopped vegetables you like (if you use frozen vegetables, add in the last ten minutes)
Salt and ground pepper
Wash beef and pat dry with paper towels. Cut into bite-size cubes and dredge in flour.
Pour some olive oil into frying pan and heat (I use an electric skillet). Add garlic clove and onions. Fry until translucent and golden. Remove from pan.
Add beef to pan and brown at high heat until a golden crust forms on the meat. In the meantime, prepare the vegetables. Add water to make a gravy and add the ketchup. Add salt and pepper to taste. Put onions and garlic back in pan; add vegetables.
Cover with lid and let ingredients cook for about 1 hour, or until vegetables are done. Remove the lid to reduce liquid.
When stew is done, place in bowls and serve with a salad and French bread. Enjoy!
