Rosemary and Garlic Pork Tenderloin

Mmm…who doesn’t love a good pork tenderloin dinner! Here’s my recipe for a garlic and rosemary dish.

Recipe feeds two people generously.

1lb. tenderloin
Garlic clove, chopped
Springs of fresh rosemary
Salt and ground pepper
Olive oil

Brush tenderloin with olive oil. Score tenderloin with X’s to stuff in the garlic pieces. Lay the sprigs of rosemary on top.
Generously sprinkle with salt and ground pepper. Place in baking dish.

Bake in 375 F oven for 40-45 minutes, according to desired doneness. After removing the dish from the oven, let stand for 7-10 minutes. Slice into medallions and serve.
